Great purchase
After seasoning, we tried the dish and came out great.Needs to be seasoned thoroughly by cleaning with scrubber 6 to 7 times. Dry it and heat the pan and apply oil repeatedly wiping out. Fonally with oil fry onion for 20 minutes and discard the onion. Finally wip out with tissue paper or cloth.

Impossible to season
I already use quite a few cast iron pan and pots and I know how to season and maintain them. But this Zishta panniayara thattu just cannot be seasoned. I did all that I could but every time time I make panniyaram in it the panniyaram comes out coated with iron bits. It is impossible to eat the panniyarams. I am so deeply disappointed.

Iron dust does not go
It is with considerable sadness that I am writing this review. I bought this pan a little while ago and have been trying to use it. I have followed the instructions and did the frying onions for 20 mins a few times. Unfortunately, there is grit/sand like residue that keeps coming out of the pan making anything cooked in it inedible. I contacted Zishta and they came back very quickly. But the solution of frying onions does not make a difference and problem remains. I have no choice but to get rid of it. I even tried scraping it off with a knife. Such a shame as the cavities are an excellent size and it seems to work well except for the grit. I think it is the sand during casting that has baked into the pan and keeps leaching out. You can see what I mean in the photos. I am bitterly disappointed. If anyone has a solution please let me know.
